I've always wanted to be able to make great tortillas and have tried several times, but I've always ended up with thick hard things that were hardly palatable. This tortilla recipe is quick, easy, and a big hit at our house! Plus a real bonus, there really wasn't a learning curve in learning how to make them great; they were a success from the very first attempt.
Tortillas
3 cups flour
1 tsp. salt
1 tsp. baking powder
1/3 c. oil
1 cup warm-hot tap water
Combine all the dry ingredients in a stand up mixer. Add oil and water and mix for about 2 minutes until a soft dough forms. Divide the dough into 16 equal pieces, and form them into balls. Let the dough rest for at least 15 minutes.
Heat a pan or skillet over medium heat. Roll out each tortilla ball using plenty of flour and a heavy duty rolling pin. Your tortillas should almost be see through. Cook on the hot pan about 1 minute on each side. If your tortillas aren't browning within about a minute, turn the heat up. We love them fresh and hot, but they are also good cooled and refrigerated for later! We eat them with tacos, burritos, quesadillas, and chicken wraps.
